Chicken & Shrimp Cajun Spaghetti

Features Don's Chicken & Shrimp Sausage


Servings: 6

Ingredients:

5 oz vegetable oil
1 small onion, diced
2 bell peppers, diced
2 tsp minced garlic
water
1 pk McCormick Italian Spaghetti Sauce Mix
Don’s Specialty Meats All-Purpose Seasoning
2-8oz cans tomato sauce
2-6oz cans tomato paste
2 pks Don’s Chicken & Shrimp Sausage (4-5 lbs)
4.5 oz can sliced mushrooms
1 pk #3 spaghetti noodles (1lb)

Directions:

  1. In a 6 qt pot over medium heat, mix ½ cup vegetable oil, tomato sauce, 2 cans water, tomato paste, and Italian spaghetti sauce mix.  Sprinkle with Don’s All-Purpose Seasoning and allow sauce to boil slightly. Reduce to medium-low heat and allow sauce to cook for 30 minutes, stirring often.
  2. While sauce is cooking, brown onions, bell peppers, and garlic in a medium saucepan over medium-high heat with 1 oz vegetable oil. Cook mixture until vegetables are lightly browned, stirring often.  Add little water if vegetables begin to stick to bottom of pot.
  3. Reduce heat to medium.  Remove chicken and shrimp meat from the sausage casing and add to vegetable mixture.  Stir together and cook the mixture until meat is light golden brown (about 15-20 minutes), stirring often.
  4. Add meat and vegetable mixture to sauce with 1 cup water.  Add mushrooms and mix well.  Reduce to low heat and allow to cook for 30-40 more minutes, stirring often.  Sprinkle again with Don’s seasoning.
  5. Bring a large pot of water to a boil.  Add spaghetti noodles and cook for 10 minutes, or until noodles are visibly tender, stirring often.  Drain.
  6. Pour sauce over pasta and serve.

 

*For a Cajun twist, add sliced smoked chicken sausage to meat mixture (as seen in picture)
